Chicken Gyros in Tomato Cream Sauce (Print Version)

# Ingredients:

→ For the gyros

01 - 600g (1.3 lbs) chicken breast fillets, cut into bite-sized pieces
02 - 2-3 tablespoons gyros seasoning blend
03 - 2 tablespoons olive oil

→ For the tomato cream sauce

04 - 2 medium onions, finely diced
05 - 2 garlic cloves, minced
06 - 2 tablespoons tomato paste
07 - 3 tablespoons ajvar (red pepper spread)
08 - 400g (14 oz) strained tomatoes (passata)
09 - 400g (14 oz) diced tomatoes
10 - 100ml (⅓ cup + 1 tbsp) heavy cream
11 - 2 teaspoons dried thyme
12 - 2 tablespoons sweet paprika powder
13 - 1 teaspoon vegetable bouillon powder dissolved in 100ml water
14 - Fresh parsley, chopped
15 - Salt and freshly ground black pepper to taste

# Instructions:

01 - Cut the chicken breast into bite-sized pieces. In a bowl, combine the chicken with olive oil and gyros seasoning, ensuring each piece is well coated. For best results, cover and refrigerate overnight, but even 30 minutes will add flavor if you're short on time.
02 - Peel and finely dice the onions and mince the garlic cloves. Set aside.
03 - Heat a large pot or deep skillet over medium-high heat. Add the marinated chicken and cook until it begins to brown, about 5-6 minutes. Add the diced onions and garlic, and continue cooking until the onions are translucent and the chicken is nearly cooked through.
04 - Add the tomato paste and ajvar to the pot, stirring to coat the chicken. Cook for 1-2 minutes to develop flavor, then add the strained tomatoes, diced tomatoes, and dissolved bouillon. Stir in the thyme and paprika. Bring to a simmer and cook for about 10 minutes to let the flavors meld. Stir in the heavy cream, reduce heat to low, and simmer for another 2-3 minutes. Season with salt and pepper to taste, and garnish with freshly chopped parsley before serving.
