In a bowl, stir together mayonnaise, 1 tablespoon dill pickle relish, sugar-free ketchup, and Swerve until well combined.

Preheat the oven to 400°F (200°C).

Arrange shredded cheddar cheese in circles about 3-4 inches across on a parchment-lined baking sheet. Bake for 6-8 minutes until the edges of the cheese circles start to brown and turn crispy.

Remove the baking sheet from the oven. Immediately place a line of sauce down the center of each cheese circle, sprinkle shredded lettuce on top, and add some meat mixture down the center.

Quickly roll the cheese circles up around the filling. Allow the cheese to cool and harden, then serve.
