Low Carb Cabbage Casserole (Print Version)

# Ingredients:

01 - 3 tablespoons oil
02 - 1 pound ground beef
03 - 1 sweet onion, chopped
04 - 1 orange bell pepper, seeded and chopped
05 - 3 garlic cloves, chopped
06 - 14 ounces fire roasted diced tomatoes
07 - 1/2 teaspoon smoked paprika
08 - 1/2 teaspoon dried oregano
09 - 1/2 teaspoon garlic powder
10 - 1/2 teaspoon onion powder
11 - Salt and pepper, to taste
12 - 1 small head green cabbage, cored and chopped
13 - 2 cups shredded cheddar/jack cheese

# Instructions:

01 - Heat oil in a large pan or Dutch oven over medium-high heat. Add ground beef, onion, and orange bell pepper. Cook until the beef is browned and the onions are translucent.
02 - Stir in chopped garlic and saute for an additional minute.
03 - Add fire roasted diced tomatoes, smoked paprika, dried oregano, garlic powder, onion powder, salt, and pepper. Stir to combine.
04 - Place chopped cabbage on top of the mixture. Cover and cook for 15-20 minutes or until the cabbage is tender. Add 1/4 cup water if needed.
05 - Sprinkle shredded cheddar/jack cheese over the mixture. Cover and cook until the cheese is melted.
06 - Once the cheese has melted, remove from heat and serve.

# Notes:

01 - If the cabbage does not release enough liquid during cooking, add 1/4 cup of water to the pan.
