Preheat your oven to 320°F (160°C) with fan/convection. Line a baking sheet with parchment paper.

Separate the eggs, placing the whites in one bowl and the yolks in another. Beat the egg whites with a pinch of salt until stiff peaks form. In the other bowl, mix the egg yolks with the cream cheese and baking powder until smooth and well combined. Gently fold the beaten egg whites into the yolk mixture using a spatula, taking care to maintain as much air as possible.

Using a large spoon or ice cream scoop, portion the mixture into 8 equal mounds on the prepared baking sheet, leaving space between each. Bake for 15-20 minutes until golden and set. They should be slightly firm to the touch but still have a soft, bread-like texture inside.
