Pizza Soup with Ground Beef (Print Version)

# Ingredients:

β†’ Fresh vegetables

01 - 3 bell peppers (mix of red, yellow and green for color)
02 - 1 medium yellow onion
03 - 2 plump garlic cloves
04 - 7 oz (200g) fresh button mushrooms
05 - 1 can corn kernels (5 oz/140g drained weight)

β†’ Protein

06 - 1 lb (500g) ground beef (80/20 lean to fat ratio works best)
07 - 2.5 oz (75g) smoked sausage or pepperoni, diced (optional for extra flavor)

β†’ Sauce base and seasonings

08 - 2 cups (500g) tomato puree or passata
09 - 7 oz (200g) processed cheese (like Velveeta), cubed
10 - 1ΒΌ cups (300ml) vegetable broth
11 - 1 tablespoon olive oil
12 - Salt to taste
13 - Freshly ground black pepper
14 - 1 teaspoon dried oregano

# Instructions:

01 - Finely dice the onion and mince the garlic. Heat the olive oil in a large pot over medium heat, then add the onion and garlic, cooking until soft and translucent (about 3 minutes).
02 - Add the ground beef and diced smoked sausage (if using) to the pot. Break up the meat with a wooden spoon and cook until no longer pink, about 5-7 minutes.
03 - Core and dice the bell peppers, slice the mushrooms, and drain the corn. Add all these vegetables to the pot and stir to combine with the meat mixture.
04 - Pour in the tomato puree and vegetable broth. Add the cubed processed cheese and stir occasionally until the cheese melts completely into the sauce. Let it simmer over medium-low heat for about 10 minutes to blend the flavors. Season with salt, pepper, and oregano to taste.

# Notes:

01 - Serve with a sprinkle of shredded cheddar on top if you'd like extra cheesiness.
02 - The smoked sausage adds great flavor but can be omitted for a simpler version.
