Preheat oven to 375°F (190°C). Make a lengthwise slit in each date and remove the pit.

Fill each date with about 1 teaspoon of Boursin cheese and press slightly closed. Place on a baking sheet.

Sprinkle chopped pistachios over the dates, pressing gently to adhere.

Roast for 6-8 minutes until dates are warm and cheese is slightly softened.

Drizzle with honey and garnish with thyme if desired. Serve warm.
