Easy peanut butter cookies (Printer-Friendly Version)

# What You'll Need:

→ Cookie Ingredients

01 - 1 cup peanut butter (creamy works best)
02 - 1 cup granulated sugar
03 - 1 egg

# Let's Cook!:

01 - Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper to prevent sticking and make cleanup easier.
02 - In a large mixing bowl, combine the peanut butter, sugar, and egg. Mix using a wooden spoon or electric mixer until everything is smooth and well combined. The dough will be quite thick.
03 - Use a medium cookie scoop to portion out the dough, then roll each portion between your palms to form balls. Place them on the prepared baking sheets, leaving about 2 inches between each cookie. Using the back of a fork, press down on each ball to create a crisscross pattern and flatten the cookies.
04 - Bake in the preheated oven for 8-10 minutes or until the edges are slightly browned. Don't overbake - they'll still be soft in the center but will firm up as they cool.
05 - Remove from the oven and let the cookies rest on the baking sheet for 2 minutes, then transfer to a wire cooling rack to cool completely for about 5 minutes before enjoying.

# Recipe Notes:

01 - This recipe works with both smooth or crunchy peanut butter, though smooth creates a more uniform texture
02 - Store cookies in an airtight container at room temperature for up to 5 days
03 - For a less sweet version, reduce sugar to 3/4 cup
04 - Natural peanut butter works but may result in a slightly different texture
