Creamy Tortellini Casserole (Print Version)

# Ingredients:

01 - 1 pound (500g) fresh tortellini (any filling you prefer)
02 - 1/2 medium head of broccoli
03 - 5 ounces (150g) cooked ham

→ For the creamy sauce

04 - 2 medium onions
05 - 2 tablespoons butter
06 - 3 tablespoons all-purpose flour
07 - 1¼ cups (300ml) vegetable broth
08 - 1/2 cup (100ml) milk
09 - 3/4 cup (200g) heavy cream
10 - 1 cup (100g) freshly grated Parmesan cheese

→ Seasonings and toppings

11 - Salt and freshly ground black pepper, to taste
12 - Pinch of ground nutmeg
13 - 1-2 tablespoons fresh parsley, chopped
14 - 1½ cups (150g) shredded cheese for topping (cheddar, mozzarella, gouda, or Swiss)

# Instructions:

01 - Finely dice the onions and cut the ham into small cubes. Divide the broccoli into small florets and blanch them in boiling water for 2-3 minutes until just tender but still bright green. Drain and set aside.
02 - Bring a large pot of salted water to a boil and cook the tortellini according to package instructions until al dente. Be careful not to overcook them, as they'll continue cooking in the oven. Drain well.
03 - In a large saucepan, melt the butter over medium heat. Add the diced onions and sauté until soft and translucent, about 3-4 minutes. Sprinkle the flour over the onions and cook, stirring constantly, for about 1 minute to remove the raw flour taste. Gradually whisk in the vegetable broth until smooth, then add the milk, cream, and grated Parmesan. Simmer gently until the sauce thickens, about 3-5 minutes. Season with salt, pepper, and a pinch of nutmeg.
04 - Preheat your oven to 320°F (160°C) with fan. Spread the cooked tortellini in an even layer in a baking dish. Distribute the blanched broccoli florets and ham cubes over the pasta. Pour the creamy sauce evenly over everything, making sure to cover all the pasta. Sprinkle the shredded cheese over the top.
05 - Bake in the preheated oven for about 25 minutes, until the cheese is melted and golden brown on top and the edges are bubbling. Remove from the oven and let rest for 5 minutes. Sprinkle with fresh chopped parsley before serving.
